Super easy flour-free banana muffins!

Here’s a super quick/ easy recipe for flour-free banana muffins. Found this one on the internet. Thanks, internet!

Only things you need: oats, eggs, bananas, Greek yogurt, baking powder, baking soda and sugar.
Step one: Gather your stuff. Only things you need: oats, eggs, bananas, Greek yogurt, baking powder, baking soda and sugar.

We had extra, browning bananas…which is what inspired me to look for something to make.

Also! Tip for those making these for someone with a gluten-intolerance: make sure you use gluten-free oats. Most oats are processed with wheat flours so you need to be super careful. I buy ones specifically marked “gluten free.”

Put all the ingredients in a blender.
Step two: Put all the ingredients in a blender.
Blend.
Step three: Blend.

(I added some sprinkles of cinnamon at this point!)

Fill the muffin tins.
Step four: Fill the muffin tins.

There was a lot of batter at this point. Like, they were all filled to the tippy-top.

Bake at 400 until they're gorgeous like these.

Quick Flour-free Banana muffins
Ingredients Makes one dozen
2 1/2 cups of old fashioned oats
1 cups of Greek Yogurt
2 eggs
3/4 c. sugar

1/2 tsp. baking soda
1 1/2 tsp. baking powder
2 bananas
Instructions:
  • Preheat the oven to 400 degrees. Coat your muffin tins with non-stick spray…even if you’re using cupcake papers (trust me).
  • Add all of your ingredients to a blender. Blend.
  • Pour the batter into the muffin tin.
  • Bake for 20-25 minutes.
  • Mmmmmm mmmmm! Tasty food!

As a note: these are super tasty. I used strawberry Greek yogurt, and they ended up pretty sweet once the sugar was added, too. I feel like you could use plain yogurt and add honey or something. It gives you a lot to work with. 🙂

  1. Ha! I had actually been experimenting with baked oatmeal a couple days ago; ended up with something quite similar, but sans the sugar. (Sweetened with a little honey and raisins) Wish I woulda seen this sooner; I baked mine in a pan, and was having a hard time keeping the outer rim from overcooking while I waited for the center to cook. I like the idea of muffin-style. Nice blog, BTW.
